Italian Crostata Recipe

Ingredients for Italian Crostata Recipe:Bread Flour - 3.5 oz (100 gr) Butter - 3.5 oz (100 gr) Sugar - 2 oz (60 gr) Potato starch - 2 oz (60 gr) Egg Yolks - 3 Icing Sugar Jam (Strawberry or Apricot.. or the one you prefer) OR Chocolate Cream
Recipe: Mix the butter with the sugar and the yolks, then slowly add the flour and the potato starch and kead until obtaining a soft dough (the butter should never completely melt, so kead quickly!). Make a ball with the dough and put it in the fridge for one hour. Grease a cake pan with butter and cover it with flour, then remove the flour in excess.Remove the ball from the fridge and stretch it out with the rolling pin until you get a thick sheet of pastry. Cut out from the dough a round piece a little bigger than your cake pan. Lie the round piece of dough inside your cake pan and shape it on it. Fill the dough with your favourite jam or chocolate cream.Cut some slices of dough and cross them over the jam, then put the cake in the pre-heated oven at about 180 degree Celsius (356 degree Fahrenheit) for 25 minutes. Remove from the oven and let the cake cool down, then serve.
