Italian Cookies Recipes

Ingredients for Italian Cookies Recipes:Bread Flour - 3.5 oz (100 gr) Butter - 3.5 oz (100 gr) Sugar - 2 oz (60 gr) Potato starch - 2 oz (60 gr) Egg Yolks - 3 Icing Sugar
Recipe: Mix the butter with the sugar and the yolks, then slowly add the flour and the potato starch and kead until obtaining a soft dough (the butter should never completely melt, so kead quickly!). Make a ball with the dough and put it in the fridge for one hour. Get the dough and stretch it out with a rolling pin, until you get a thick sheet of pastry. Cut out the cookies with a cookie cutter and put them on a sheet of wax paper, then bake them for 20 minutes in the pre-heated oven at about 180 degree Celsius (356 degree Fahrenheit). Remove the cookies from the oven, let them cool down and serve them topped with icing sugar.
